We have experienced a great loss. Melinda Watson unexpectedly passed ten days before her 70th Birthday. We would like to honor her life and legacy by announcing that, as we navigate this transitional phase, we will be closed until further notice. Memorial services, given by her daughter, will be announced in the near future. We truly thank you, our customers, staff, and family, for the support over the decades and for your understanding as we process and heal from this deep loss to our family, and community. Established in 1935

The Shropes had previously owned “The Bushkill Street Saloon” in the early 1900’s – a gas station, pool hall & speakeasy located across the street from our present location. In 1935 Gehly & Dorothy Shrope (Melinda’s Mother & Ashley’s Grandmother) established Shrope’s Cafe on 11th & Wood Ave. They worked together and created a place for everyone to feel welcomed and at home. Dorothy would become the sole proprietor from 1952 until 1976. Dorothy was one of the first women in Northampton Co. to hold & operate under a liquor license. Since 1976 Melinda has carried on the tradition her Mother began, but with her own vision and creative flare. In 1997 Shrope’s Cafe became Ashley’s Signature Restaurant & Lounge. Melinda had renamed the establishment for her daughter. 3 Generations Serving the Lehigh Valley for 91 years.
